Buckwheat and Banana Pancake Recipe



To make pancakes for 2:

Pancake mixture ingredients: 2/3 cup buckwheat flour 1/2 tsp cinnamon 1/4 tsp bicarbonate of soda 1 egg 🄚 Milk (approx 1/2 cup) šŸ„› 1 banana (mashed) šŸŒ

Topping ingredients: Greek yoghurt Fruit of your choice šŸ“ Maple syrup

Method: Put dry ingredients in a jug or bowl and crack in the egg. Add the milk and stir well. The consistency should be like double cream so add a bit more milk if needed. Gently stir in mashed banana (you want to retain some texture). Heat butter (or coconut oil) in a pan. Add a good spoonful of mixture for each pancake to the pan over a medium heat. They can be made bigger but they are harder to flip! Once bubbles appear, gently turn the pancakes and cook for a couple of minutes on other side. Once browned on both sides, plate up with a dollop of Greek yoghurt, fruit and a swirl of maple syrup.
